Harvest lasted from late October to early November. By then the bunches already contain some overripe, dehydrated and botrytized (aszú) berries. After 24 hours of maceration, the grapes were pressed and soon the fermentation began at low temperature. We do not use barrels for aging, in order to preserve this special overripe character of the grapes.
